Most top chefs will tell you the same thing: When they're finally free from painstaking labor in the kitchen, they crave late-night street food that's poetically simple and satisfying: a hot dog, fried rice, a bowl of noodles. According to chef Enrique Olvera of Cosme in New York and Pujol in Mexico City, this hand-to-mouth haiku can be found in the avocado tacos he consumes at any time of the day.

At its most basic, an avocado taco is like a two-bite couplet celebrating Mexican ingredients: a chewy corn tortilla surrounding creamy slices of tree-grown butter. Reserve additions elevate the avocado: a pinch of salt, a squeeze of lime juice, a pinch of chopped onion, and cilantro. But the chef takes the elevation one step further with salsa made from pasilla peppers and tomatillos.

Contents

12 total tacos

4pasilla peppers
½ teaspoon coarse sea salt
2garlic cloves
10tomatillos, boiled in salted water for 15 minutes or until tender
3 avocados, thinly sliced
12Cornbread
¾ cup white onion, finely chopped

Preparation

Prepare the salsa: Remove the stems and seeds from the strawberries. Using tongs, carefully hold the peppers over medium heat until charred on all sides. Transfer the peppers to a food processor, add salt and grind to powder. Add the garlic and tomatillos and puree until smooth. (This makes 1 pint of salsa, more than needed; refrigerate the rest in an airtight container for up to 2 weeks.)

To serve, place 3 or 4 slices of avocado on each tortilla and top with salsa, onion, and cilantro.

As you take your last delicious bite, savor the lingering notes of avocado, spice, and all the vibrant flavors that make these tacos truly extraordinary. Avocado tacos aren't just a meal; they are an experience, a celebration of simplicity and freshness on your plate. With every bite, you embraced the heartiness of the avocado, the warmth of the spices, and the satisfaction of a well-prepared taco. We hope this recipe delights your palate and inspires you to continue exploring the world of culinary delights.
