Banana Oat Pancakes

Start your morning with a burst of flavor by whipping up these delectable banana pancakes, which combine the sweetness of ripe bananas with the comforting warmth of fluffy pancakes.
Make our healthier pancakes using oatmeal and bananas for natural sweetness. Serve with a dollop of creamy yoghurt and fresh fruit.

125ml oat milk
2 eggs, separated
1 small banana
100 g oatmeal
2 teaspoons baking powder
a few drops of vanilla extract
oil, we used avocado oil spray
low-fat yoghurt and fruit on top


Instructions


Place the oat milk, egg yolks, banana, oats, baking powder, and vanilla in a blender and process until you have as smooth a mixture as you can get. Beat the egg whites until stiff peaks form. Whisk 1-2 tablespoons of the whites into the dough, then add the rest.

Heat a non-stick pan over medium heat and spray some oil on it, pour about 2 tablespoons of batter into the pan and cook for 1-2 minutes until the base has set and bubbles appear on the top. Flip and cook the other side for about a minute. Repeat in batches, making sure the top looks dry before trying to flip it, otherwise the center will collapse.
