Necessary materials
This recipe calls for simple ingredients you probably have on hand. Adding a ripe banana acts as a natural sweetener, adding flavor to the waffles and adding moisture without adding extra fat. Here's a note about each of the ingredients:
Oat. Instead of regular flour or a gluten-free flour blend, these are made with old-fashioned oatmeal! To keep these gluten-free products, use certified gluten-free oatmeal.
Milk. Any type of milk will work. I usually use a dairy-free milk like unsweetened almond milk or cashew milk.
Vanilla extract and cinnamon. For more flavor!
Eggs. You'll need two eggs to help bind, add structure to the waffles, and ensure they cook properly.
Banana. For the most flavor and extra sweetness, use a ripe banana with brown to black spots.
Baking powder. To ensure these contain plenty of fluff.
Sweetener. We usually don't add any sweeteners to the dough because adding a drizzle of maple syrup is enough sweetness, but feel free to add a packet of stevia or a tablespoon or two of sugar or maple syrup.
